  • 1 can enchilada sauce
  • 8 pieces corn tortillas Consider gluten-free tortillas if needed.
  • 1 cup shredded cheese Monterey Jack or pepper jack can add flavor.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Add black beans (if using) and half of the enchilada sauce to the beef, stirring to combine.

Assembly
