Preparation

  • Preheat your oven to 375°F (190°C).
  • In a baking dish, toss the cherry tomatoes and spinach with olive oil, seasoning with salt and pepper.
  • Crumble the feta cheese on top of the vegetable mixture.
  • Make two wells in the mixture and crack one egg into each well.
  • Sprinkle the eggs with salt and pepper.

Baking

  • Bake for 15-20 minutes until egg whites are opaque and yolks reach your desired doneness.

Serving

  • Garnish with fresh herbs before serving.
  • Serve the dish directly from the baking dish with toasted sourdough or a crispy baguette.

Notes

For extra flavor, consider adding red pepper flakes before baking, or a dash of lemon juice when serving. Leftovers can be stored in the refrigerator for up to 2 days.
