For the Chicken

  • 2 pieces Chicken breasts Boneless, skinless
  • 2 tablespoons Olive oil For marinating
  • 2 tablespoons Balsamic vinegar For marinating
  • 1 tablespoon Honey or maple syrup For sweetness
  • 1 teaspoon Dijon mustard For marinating
  • to taste Salt To taste
  • to taste Pepper To taste

For the Salad

  • 4 cups Baby spinach Base of the salad
  • 1 medium Avocado Sliced
  • 1 cup Cherry tomatoes Halved
  • 1 cup Mozzarella balls For creaminess

For the Vinaigrette

  • 2 tablespoons Olive oil For dressing
  • 2 tablespoons Balsamic vinegar For dressing
  • 1 tablespoon Honey or maple syrup For sweetness
  • 1 teaspoon Dijon mustard For dressing
  • to taste Salt To taste
  • to taste Pepper To taste

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Marinate chicken breast with olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper for at least 30 minutes.

Cooking

  • Bake the marinated chicken in the preheated oven for about 25-30 minutes or until fully cooked.
  • While the chicken is baking, prepare the balsamic vinaigrette by whisking together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper in a small bowl.

Assembly

  • In a large bowl, combine baby spinach, avocado, cherry tomatoes, and mozzarella balls.
  • Once the chicken is cooked, let it rest for a few minutes, then slice it and add to the salad.
  • Drizzle the balsamic vinaigrette over the salad, toss gently, and serve.

Notes

Substitute mozzarella with goat cheese or feta for a different flavor. Grilled shrimp or tofu can be used instead of chicken for a lighter option. Ensure to store salad components separately to maintain freshness up to 3 days.
