  • 1 cup cottage cheese High-quality cottage cheese enhances flavor and texture.
  • 1 cup rolled oats
  • 1 large egg
  • 1/4 cup honey or maple syrup Maple syrup can be used for a vegan alternative.
  • 1 tsp vanilla extract
  • 1 tbsp zest of 1 large lemon About 1 tablespoon.
  • 1/2 tsp baking powder
  • 1 pinch salt
  • 3/4 cup fresh or frozen blueberries Do not thaw if frozen.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 24-cup mini muffin pan.
  • Combine cottage cheese, rolled oats, egg, honey, vanilla extract, lemon zest, baking powder, and salt in a blender or food processor. Pulse until the mixture is smooth and the oats are broken down.
  • Transfer the batter to a bowl, and gently fold in the blueberries.
  • Let the batter sit for about 5 minutes to thicken slightly.
  • Divide the batter among the prepared mini muffin cups, filling each cup about three-quarters full.
  • Bake for 18-22 minutes, until the bites are firm to the touch and lightly golden on top.
  • Allow the bites to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

These bites are versatile: enjoy them warm, or let them cool and pack them for lunch. They pair well with fresh fruit or can be drizzled with honey or maple syrup. For brunch, serve with yogurt and mixed berries. To store, keep in an airtight container in the refrigerator for up to five days, or freeze in a freezer-safe container.
