  • 2 cups cooked chicken, shredded Use leftover rotisserie chicken for convenience.
  • 1 can black beans, drained and rinsed Rinse to reduce sodium.
  • 1 cup corn kernels
  • 1 cup salsa
  • 2 cups cooked rice Pre-cooked rice for even cooking.
  • 2 cups shredded cheese (cheddar or Mexican blend) Consider Monterey Jack for spicier option.
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Tortilla chips (optional for topping) Add for extra crunch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked chicken, black beans, corn, salsa, rice, and spices.
  • Pour half of the mixture into a greased casserole dish.
  • Sprinkle 1 cup of cheese over the first layer.
  • Add the remaining mixture on top and finish with the remaining cheese.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Serve warm, optionally topped with tortilla chips.

Notes

For additional flavor, consider adding sautéed bell peppers or onions. Ensure any added sauces or chips are gluten-free if needed.
