  • 2 medium semi-ripe bananas Sliced into 1/3-inch thick slices
  • 1/2 cup drippy, creamy peanut butter Warm slightly in the microwave if too thick
  • 2 tablespoons drippy, creamy peanut butter Additional hands for spreading
  • 1.5 cups dark chocolate chips Can substitute with milk chocolate chips for a sweeter taste
  • 1 teaspoon coconut oil Optional, can enhance texture
  • to taste flaky sea salt Optional, for garnish

Instructions
 

Preparation

  • Line a medium-sized baking sheet with parchment paper.
  • Peel and slice the bananas into 1/3-inch thick slices.
  • Arrange the banana slices in a rectangular shape on the lined baking sheet, ensuring they are touching.
  • Spread the peanut butter evenly over the bananas to cover them completely.
  • Place the bark into the freezer for 20 minutes to set.

Melting Chocolate

  • After 20 minutes, add the chocolate to a microwave-safe dish and heat it in 30-second intervals until mostly melted.
  • Stir the chocolate to fully melt, watching to avoid burning.
  • Remove the bark from the freezer and pour and spread the melted chocolate over it in an even layer.
  • Sprinkle with sea salt and any additional toppings, if desired.
  • Place the bark back into the freezer for at least 90 minutes, up to 2 hours to fully set.

Serving

  • Once the banana bark is ready, remove it from the freezer and peel off the parchment paper.
  • Break it up into large pieces and serve.

Notes

Store in an airtight container in the freezer for up to two months. For best results, separate pieces with parchment paper to prevent sticking.
