  • 1 cup pecans Can substitute with almonds.
  • 1 cup oatmeal
  • 12-15 dates dates (about 1 ½ – 2 cups) Use medjool dates for sweetness.
  • ½ cup peanut butter Can substitute with sunflower seed butter for a nut-free version.
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • ½ cup mini chocolate chips Use dairy-free for vegan option.

Preparation

  • Add the pecans, oatmeal, and dates to a food processor. Blend or pulse until the mixture resembles small crumbs.
  • Incorporate the peanut butter, cocoa powder, vanilla extract, and mini chocolate chips into the mixture. Pulse again until everything is well combined and has a sticky texture.
  • Carefully remove the food processor blade and transfer the mixture to a mixing bowl.
  • Using a cookie scoop, portion out the mixture and roll it into balls about 2 inches in diameter.
  • Gently roll each ball in your hands for a smooth finish.
  • Place the energy balls in the refrigerator for about 30 minutes to firm up and minimize stickiness.

Notes

Store in an airtight container in the refrigerator for up to one week. Can be frozen for longer storage. Check for signs of spoilage before consuming leftovers.
