Stuffed Peppers

  • 4 pieces bell peppers (any color) A mix of colors is beautiful
  • 1 lb ground beef (or turkey for a lighter option) Use ground turkey for a lighter version
  • 1 cup cooked rice White or brown rice adds its own charm
  • 1 piece onion, chopped Adds depth of flavor
  • 2 cloves garlic, minced Essential for flavor
  • 1 can diced tomatoes The juice will enhance the filling
  • 1 teaspoon Italian seasoning Fresh herbs can substitute for a vibrant twist
  • to taste Salt and pepper Season according to preference
  • 1 cup shredded cheese Cheddar or mozzarella melt perfectly

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Slice the tops off the bell peppers and carefully remove the seeds.
  • In a skillet over medium heat, add the ground beef, onion, and garlic. Cook until the beef is nicely browned, and the onions have turned translucent.
  • Stir in the cooked rice, diced tomatoes, Italian seasoning, and a touch of salt and pepper, mixing everything until combined and heated through.
  • Fill each bell pepper generously with the tantalizing beef and rice mixture. Stand the stuffed peppers upright in a baking dish.

Cooking

  • Cover the dish with foil and bake for 25 minutes, letting them become tender and flavorful.
  • Remove the foil, then sprinkle cheese atop each pepper. Return them to the oven and bake for an additional 10–15 minutes until the cheese is bubbling and golden.
  • Serve warm, and enjoy the compliments!

Notes

For best flavor, opt for fresh produce. Leftovers can be refrigerated for up to 3 days in an airtight container. Reheat in the oven or microwave.
