Ingredients
  

Main Ingredients

  • 3 lbs corned beef brisket Choose a brisket with good marbling.
  • 1 jar sauerkraut (about 32 oz) Rinse for a milder flavor if desired.
  • 1 cup beer (lager or ale) Choose based on your flavor preference.
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon caraway seeds
  • to taste Salt and pepper

Preparation

  • Place the sliced onion and minced garlic at the bottom of the crock pot.
  • Place the corned beef brisket on top of the onions.
  • Spread the sauerkraut over the brisket and sprinkle the caraway seeds on top.
  • Pour the beer over everything, then add salt and pepper to taste.

Cooking

  • Cover and cook on low for 6-8 hours, or until the beef is tender and easily pulls apart with a fork.
  • Serve hot, sliced with the sauerkraut on the side.

Notes

To avoid overcooking, monitor the cooking time, as slow cookers may vary. Searing the brisket before placing it in the crock pot can add extra flavor. Store any leftovers in airtight containers and refrigerate within two hours of cooking.
