  • 1 cup rotisserie chicken, chopped into small chunks Opt for a fresh and well-cooked rotisserie chicken.
  • 1/2 cup low-fat (2% milkfat) cottage cheese, blended smooth Blend until fully smooth for a creamy texture.
  • 1/4 cup jarred banana peppers, diced Can be mild or spicy based on preference.
  • 1/4 cup red onion, diced
  • 1/4 cup celery, diced
  • 2 tablespoon green onion, thinly sliced

Seasonings

  • 1/2 teaspoon Dijon or spicy mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt Adjust according to taste.
  • 1/4 teaspoon pepper Adjust according to taste.

Instructions
 

Preparation

  • In a food processor, pulse cottage cheese, mustard, garlic powder, salt, and pepper until smooth.
  • In a large mixing bowl, combine blended cottage cheese mixture, chopped chicken, banana peppers, red onion, celery, and green onion. Stir until well combined.
  • Taste salad and adjust seasonings if needed.
  • Serve immediately or store in the fridge until ready to serve.

Notes

This salad can be enjoyed as a sandwich filling, on a bed of greens, or as a dip with crackers or veggie sticks. It’s best served cold and is perfect for meal prepping as it lasts for 3 to 4 days in an airtight container.
