Ingredients
  

Main Ingredients

  • 1 lb ground beef Can be substituted with ground turkey or chicken.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed Can be replaced with black beans or pinto beans.
  • 1 cup corn, frozen or fresh
  • 2 cups beef broth
  • 1 teaspoon chili powder Adjust for more heat as desired.
  • 1 teaspoon cumin
  • to taste Salt and pepper

Optional Toppings

  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions

Instructions
 

Preparation

  • In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  • Add the chopped onion and minced garlic to the pot, and sauté until softened.

Cooking

  • Stir in diced tomatoes, kidney beans, corn, beef broth, chili powder, cumin, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for about 20 minutes.
  • Taste and adjust seasoning as needed.
  • Serve hot, topped with optional cheese, sour cream, and green onions.

Notes

This soup is excellent if made in advance. It tastes better the next day as the flavors meld together. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
