Preparation

  • In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  • Add the chopped cauliflower and sauté for another 5 minutes.

Cooking

  • Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 15-20 minutes, or until the cauliflower is tender.
  • Use an immersion blender or a regular blender to puree the soup until smooth.
  • Stir in the heavy cream or coconut milk, and season with salt and pepper to taste.

Serving

  • Serve hot, garnished with croutons, chives, or cheese if desired.

Notes
