For Assembling

  • 4 large tortilla wraps Whole wheat or spinach tortillas can be used for extra flavor.
  • 1 cup cucumber, sliced Make sure slices are thin.
  • 1 cup tomatoes, diced Heirloom tomatoes add color.
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced Low-sodium options recommended.
  • 1 cup spinach or lettuce Fresh spinach adds nice texture.

Preparation

  • Mix cream cheese, feta, olive oil, lemon juice, oregano, salt, and pepper in a bowl until smooth.
  • Lay out the tortilla wraps on a clean surface for easy assembly.
  • Spread a generous layer of the creamy cheese mixture over each wrap, ensuring even coverage.
  • Layer each wrap with cucumber, tomatoes, red onion, olives, and spinach, distributing them evenly.
  • Roll each wrap tightly, starting at one edge and moving to the other.
  • Slice the rolled tortillas into pinwheels about 1 to 1.5 inches thick using a sharp knife.
  • Enjoy immediately, or chill in the fridge for later!

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. For added heat, sprinkle crushed red pepper. For extra sweetness, a drizzle of balsamic glaze works well.
