Ingredients
  

For the Dressing

  • 2 cups plain Greek yogurt Can substitute with light mayonnaise or dairy-free yogurt.
  • 2 tbsp Dijon mustard
  • 2 tbsp lemon juice
  • 2 tsp garlic powder

For the Salad

  • 12 oz Brami fusilli pasta Ensure pasta is cooked al dente.
  • 1 cup cherry tomatoes, halved
  • 1 cup English cucumbers, chopped
  • 1 pound cooked chicken breast, diced Can substitute with canned chickpeas or tofu.
  • 4 oz fresh mozzarella, chopped
  • 2 tbsp fresh herbs, chopped Basil or cilantro recommended.

Instructions
 

Cooking the Pasta

  • Bring a large pot of salted water to a rolling boil.
  • Add the fusilli and cook until al dente according to package instructions.
  • Drain the pasta and rinse under cold water to stop cooking.

Preparing the Dressing

  • In a small bowl, whisk together Greek yogurt, Dijon mustard, lemon juice, and garlic powder until smooth.

Combining Ingredients

  • In a large bowl, combine cooled pasta, halved cherry tomatoes, chopped cucumber, diced chicken, chopped mozzarella, and chopped herbs.
  • Pour the dressing over the salad and gently fold to coat everything evenly.
  • Taste and season with salt and pepper.
  • Chill for at least 30 minutes or serve immediately.

Notes

This salad can be made ahead of time and actually tastes better after a few hours in the fridge as flavors meld together. Store in an airtight container for 3-5 days in the fridge. Reheat gently in the microwave if desired.
