  • 2 cups cooked spaghetti
  • 2 cups cooked, shredded chicken Can use leftover or freshly roasted chicken.
  • 1 can cream of chicken soup Can substitute with cream of mushroom soup.
  • 1 cup chicken broth Consider using vegetable stock for a vegetarian version.
  • 1 cup shredded cheddar cheese Set aside some for later to enhance creaminess.
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • to taste Salt and pepper

Preparation

  • In a crock pot, combine cooked spaghetti, shredded chicken, cream of chicken soup, chicken broth, bell peppers, and onions.
  • Stir until well mixed.

Cooking

  • Cook on low for 4-5 hours.
  • About 30 minutes before serving, stir in cheddar cheese and Parmesan cheese.
  • Season with salt and pepper to taste.
  • Serve warm.

Notes

Check the sauce consistency toward the end of cooking; it should be creamy but not watery. Adjust the thickness with chicken broth if necessary.
