  • 3.5 lbs Corned Beef + Spice Packet Choose a good quality brand.
  • 1 large Sweet Onion, quartered
  • 1 lb Carrots, cut in half
  • 2 lbs Small Red Potatoes, whole
  • 12 oz Beer Can substitute with low-sodium beef broth.
  • 2-3 cups Water Add enough to cover the corned beef.
  • 1 large Green Cabbage, quartered

Preparation

  • Place onions, corned beef, seasoning packet, carrots, potatoes, and beer in a large slow cooker.
  • Add enough water to just cover the corned beef.
  • Cook on low for 9 hours.
  • Add the cabbage and cook on high for 1-1.5 hours.

Serving

  • Slice the corned beef against the grain for maximum tenderness.
  • Arrange all the vegetables on a platter alongside the beef slices.
  • Serve with whole grain mustard or a zesty horseradish.

Notes

Leftovers can be stored in an airtight container for up to 4 days. Consider freezing for up to 3 months.
