  • 32 oz frozen meatballs
  • 20 oz can pineapple chunks (drain and reserve 1/4 cup juice)
  • 2 cups BBQ sauce
  • 3-4 cloves garlic, minced
  • Green onions or chives, chopped (for garnish) Optional garnish

Preparation

  • In a medium bowl, combine the BBQ sauce, reserved 1/4 cup pineapple juice, and minced garlic. Mix until well combined.
  • Place the frozen meatballs in the Crockpot.
  • Pour the sauce mixture over the meatballs, making sure they’re evenly coated.
  • Add the pineapple chunks on top.
  • Cover the Crockpot and cook on LOW for 4-5 hours or HIGH for 2-3 hours. Stir once or twice during cooking to ensure even coating.
  • Once done, garnish with chopped green onions or chives.
  • Serve warm as an appetizer or over rice as a main dish.

Notes

For more flavor, add a tablespoon of soy sauce to the BBQ mixture or a dash of Sriracha for spiciness. Use fresh pineapple for a vibrant taste. Store leftovers in an airtight container for 3-4 days or freeze for up to three months.
