  • 1 cup chopped dates (pitted) Soak in hot water for 10 minutes before using.
  • 1/2 cup honey
  • 1/2 cup walnuts or pecans (chopped) Feel free to choose any nut of your preference.
  • 1 cup all-purpose flour Can be substituted with gluten-free flour.
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter (softened) Ensure it's softened for better mixing.
  • 2 large eggs

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • Soak the chopped dates in boiling water for about 10 minutes, then drain well.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In another bowl, beat the softened butter with honey until the mixture is light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition.
  • Gradually fold in the dry ingredients, then mix in the soaked dates and your choice of chopped nuts.
  • Pour the batter into the prepared loaf pan and bake for 50-60 minutes. A toothpick should come out clean when it’s done.
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

This cake can be served warm, drizzled with honey or topped with whipped cream. Toast thick slices and spread with cream cheese for a delightful brunch treat.
