  • 1 cup Roasted red peppers Adds a lovely sweetness.
  • 1 medium Onion Diced.
  • 2 cloves Garlic Minced.
  • 2 tablespoons Olive oil For richness.
  • 4 cups Vegetable or chicken broth The soul of the soup.
  • 1 tablespoon Fresh basil For aroma.
  • 1 teaspoon Chili flakes Add more for a spicier kick.
  • to taste Salt For flavor.
  • to taste Pepper For flavor.

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add diced onions and sauté until tender and caramelized, about 5–7 minutes.
  • Stir in minced garlic and cook until fragrant, about 1 minute.

Cooking

  • Pour in chopped tomatoes and roasted red peppers.
  • Add broth, chili flakes, salt, and pepper; stir well.
  • Allow to gently simmer for 15–20 minutes until tomatoes are soft.
  • Remove from heat and blend the soup until smooth.
  • Finish with fresh basil, taste, and adjust seasoning as needed.

Notes

Serve with a drizzle of olive oil on top. Enjoy with a crunchy baguette or grilled cheese. Leftovers can be stored in an air-tight container for up to 5 days.
