  • 1/2 teaspoon vanilla extract Optional, for added flavor.

Preparation

  • In a saucepan, combine dried apricots and water. Bring to a boil over medium heat, then reduce heat and simmer until apricots are soft, about 15-20 minutes.
  • Remove from heat and let cool slightly. Blend the mixture until smooth.
  • Return the blended mixture to the saucepan, stir in sugar and lemon juice, and cook over medium heat, stirring frequently, until it thickens, about 30-40 minutes.
  • Optional: Add vanilla extract for extra flavor.
  • Pour the jam into sterilized jars and refrigerate once cooled.

Notes

Ensure all kitchen tools, especially jars and lids, are sterilized to prevent bacterial activity in your jam. You can sterilize jars by boiling them or running them through a hot dishwasher cycle.
