  • 8 pieces all-beef hot dogs Opt for high-quality all-beef for the richest flavor.
  • 8 pieces soft hot dog buns Lightly toasted on the grill.

Firecracker Sauce

  • ¼ cup mayonnaise Light mayonnaise can be used for a lighter option.
  • 2 tablespoons sriracha sauce Adjust the amount for desired heat level.
  • 1 tablespoon honey Can be adjusted to taste.
  • 1 teaspoon smoked paprika Adds a smoky flavor.
  • 1 teaspoon garlic powder Enhances the flavor of the sauce.
  • 1 tablespoon fresh lime juice Freshly squeezed is best.

Toppings

  • 1 cup shredded sharp cheddar cheese Or substitute with pepper jack for a milder option.
  • ½ cup diced red onions
  • ½ cup sliced jalapeños Optional for extra heat.
  • to taste fresh cilantro leaves

Instructions
 

Preparation

  • In a small bowl, whisk together mayonnaise, sriracha, honey, smoked paprika, garlic powder, and lime juice until smooth. Adjust sriracha or honey to taste to fit your preference.
  • Prep toppings by dicing the red onions, slicing jalapeños (remove seeds if you prefer less heat), shredding the cheese, and roughly chopping cilantro.
  • Preheat your grill to medium-high heat (around 400°F). If using a grill pan, heat it over medium-high heat on the stove.

Cooking

  • Place hot dogs on the grill and cook for 5-7 minutes, turning occasionally until evenly charred and heated through.
  • For the last 2 minutes of grilling, place the buns cut-side down on the grill to lightly toast.

Assembly

  • Spread firecracker sauce inside each toasted bun, add the grilled hot dog, then top with shredded cheese, diced onions, jalapeños, and cilantro. Drizzle with extra sauce if desired.
  • Serve immediately and enjoy hot off the grill.

Notes

Store leftovers in airtight containers in the refrigerator for up to 3 days. Reheat using a grill or pan to maintain texture. Feel free to customize toppings and sauces to fit different taste preferences.
