Ingredients
  

For the Salad

  • 2 cans 15-ounce cans sweet corn, drained Use a high-quality canned product.
  • 1 can 15-ounce can black beans, drained Opt for organic if possible.
  • 1 can 10-ounce can Rotel, drained
  • 1 piece bell pepper, diced Can use red, green, or yellow.
  • 1 cup shredded cheddar cheese
  • 1 bag 9.25-ounce bag Fritos Fold in just before serving.
  • cup sour cream
  • 1 Tablespoon extra virgin olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon ground cumin

Preparation

  • In a small bowl, combine all the dressing ingredients: sour cream, olive oil, salt, black pepper, garlic powder, onion powder, and ground cumin. Whisk until smooth and fully incorporated.
  • In a large bowl, combine the sweet corn, black beans, Rotel, diced bell pepper, and shredded cheddar cheese.
  • Top the salad with the homemade dressing.
  • Gently stir to combine the salad and dressing mixture.
  • Add the Fritos just before serving, folding them into the salad to avoid breaking.

Notes

This salad can be made in advance and stored for up to three days. For best texture, add the Fritos just before serving.
