  • 2 cans 15 ounce cans whole kernel corn, drained
  • 1 piece red bell pepper, finely diced
  • 2 cups shredded Mexican blend cheese
  • 1 cup mayo (can substitute light mayo) Greek yogurt is also a great substitute for a healthier option.
  • 1/4 teaspoon black pepper
  • 1 bag 9.25 ounce bag Chili Cheese Fritos, lightly crushed Add just before serving to maintain crunch.
  • to taste Fresh cilantro, for garnish Optional for added freshness.

Preparation

  • In a large mixing bowl, stir together the corn, diced bell pepper, shredded cheese, mayo, and black pepper.
  • Right before serving, stir in the crushed Chili Cheese Fritos.
  • Garnish with fresh cilantro if desired.

Notes

For added heat, consider including diced jalapeƱos or cayenne pepper. Store any leftovers in an airtight container but keep Fritos separate if storing to maintain crispness.
