  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced Use fresh garlic for robust flavor.
  • 1 cup grated Parmesan cheese Divide into two halves for mixing and topping.
  • 1 cup breadcrumbs Can use plain or Italian-seasoned. For gluten-free, use alternatives.
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp soy sauce Low-sodium recommended.
  • 1 tsp salt
  • 1 tsp black pepper

Preparation

  • Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  • In a skillet over medium heat, sauté the diced onions until soft, about 5 minutes.
  • In a large bowl, mix together the ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until well combined.
  • Shape the mixture into a loaf form in the greased baking dish, smoothing the top.
  • Sprinkle the remaining Parmesan cheese on top and optionally add paprika or Italian seasoning.
  • Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  • Let rest for 10 minutes before slicing.

Notes

Store leftovers in the fridge for up to 3 days in an airtight container. Can freeze for up to 3 months. Consider adding lemon juice to the mixture for a refreshing zing.
