  • 1 medium juice of lime Fresh lime juice will enhance flavors.

Preparation

  • Grill the corn until charred, then remove kernels from the cob.
  • In a large bowl, combine the corn, Greek yogurt, red bell pepper, cherry tomatoes, red onion, and cilantro.
  • Squeeze lime juice over the mixture and season with salt and pepper.
  • Toss everything together until well combined.
  • Serve chilled or at room temperature as a side dish.

Notes

For a dairy-free option, replace Greek yogurt with a plant-based alternative. Store leftovers in an airtight container for up to 3 days.
