  • 4 cups granulated sugar Alternative sweeteners like honey or agave syrup may be used, but they will alter the flavor profile.
  • 1/4 cup lemon juice Fresh-squeezed is best, but bottled juice can suffice.
  • 1 packet pectin (optional) Helps the jam set more quickly.
  • 1/4 cup water Used to help cook the apricots.

Preparation

  • In a large pot, combine chopped apricots and water. Cook over medium heat until the apricots are soft.
  • Add the lemon juice and sugar, stirring until the sugar has dissolved.
  • If using, stir in the pectin.

Cooking

  • Increase the heat to bring the mixture to a rolling boil, then boil for about 10 minutes or until it reaches the desired thickness.
  • Ladle the hot jam into sterilized jars and seal.
  • Process in a water bath for 10 minutes for longer storage.

Notes

Keep an eye on the boiling mixture to avoid scorching. Performing a 'plate test' will help check for doneness.
