Ingredients
  

For the Chicken Marinade

  • 2 large boneless, skinless chicken breasts (or 4 small)
  • 2 tablespoons honey Can be substituted with a sugar-free alternative.
  • 2 tablespoons olive oil Divide for cooking as needed.
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice and zest of 2 limes Fresh is best for flavor but bottled juice can be used.

For the Mango Salsa

  • 1 large ripe mango, diced
  • ¼ cup red onion, finely chopped
  • 1 small jalapeño, seeded and minced (optional for heat)
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper, to taste

For Serving

  • Cooked rice, quinoa, salad greens, or tortillas
  • Lime wedges

Instructions
 

Marinate the Chicken

  • In a small bowl, whisk honey, lime juice, lime zest, olive oil, garlic, cumin, smoked paprika, salt, and pepper. Place chicken in a shallow dish or resealable bag. Pour marinade over the chicken and coat well. Marinate for at least 30 minutes, or up to 12 hours in the fridge.

Make the Mango Salsa

  • In a medium bowl, combine diced mango, red onion, jalapeño (if using), and cilantro. Squeeze lime juice over the mixture and season with salt and pepper. Stir well and let sit for 10-15 minutes for flavors to meld.

Cook the Chicken

  • For grilling, preheat grill to medium-high. Grill chicken for 5-6 minutes per side, or until internal temperature reaches 165°F (75°C). Let rest for 5 minutes before slicing.
  • For searing, heat 1 tbsp olive oil in a skillet over medium-high heat. Cook chicken for 5-7 minutes per side, until cooked through. Rest before slicing.
  • For baking, preheat oven to 400°F (200°C). Place chicken in a baking dish and bake for 20-25 minutes or until fully cooked. Let rest before slicing.

Assemble and Serve

  • Slice chicken and serve it over rice, quinoa, salad, or tortillas. Top generously with mango salsa and lime wedges. Enjoy!

Notes

For best results, marinate ahead of time and prepare salsa while chicken marinates. Use fresh ingredients for optimal flavor.
