Preparation

  • Start by peeling and dicing the russet potatoes, ensuring they are cut uniformly for even cooking.
  • Finely chop the onion, and prepare the carrots, celery, and leeks as instructed.

Cooking

  • In a large pot, melt the unsalted butter over medium heat.
  • Add the chopped onion, leeks, carrots, and celery. Sauté for about 5 minutes or until the onions become translucent.
  • Add the diced potatoes, minced garlic, dried thyme, and the vegetable or chicken broth.
  • Bring to a gentle boil, then reduce heat to low and simmer uncovered for about 20 minutes or until potatoes are tender.
  • Choose to blend the soup for a smooth consistency or mash it lightly for a chunkier texture.
  • Stir in the heavy cream, warm through, and season with salt and freshly ground black pepper to taste.
