  • 1 package lime Jello mix Use lime or any flavor of your choice.
  • 1 cup granulated sugar Can substitute with coconut sugar.
  • 1 cup unsalted butter, softened Butter should be at room temperature.
  • 2 cups all-purpose flour Use a gluten-free blend for gluten-free option.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 large egg

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter and sugar.
  • Add the egg and vanilla extract, mixing well.
  • Stir in the lime Jello mix until evenly combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let cool before serving.

Notes

Store cookies in an airtight container at room temperature for about a week. Freeze for longer storage, up to three months.
