  • 1 lb Smoked sausage Choose your favorite type
  • 1 cup Rice (long-grain or jasmine)
  • 1 medium Onion, diced
  • 1 medium Bell pepper, diced
  • 2 cloves Garlic, minced
  • 4 cups Chicken broth Can substitute with vegetable broth
  • 2 tablespoons Olive oil For sautéing
  • 1 teaspoon Paprika
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper

Optional Ingredients

  • 1 cup Peas or carrots For added nutrition and color

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and bell pepper, stirring until softened, about 5 minutes.
  • Toss in minced garlic and cook for an additional minute until fragrant.
  • Introduce sliced smoked sausage, cooking until browned and slightly caramelized.
  • Pour in the rice and stir to coat it with the mixture.
  • Carefully pour in chicken broth and add paprika, salt, and pepper, bringing the mixture to a boil.
  • Once boiling, reduce heat, cover, and let it simmer for 20 minutes, or until the rice is tender and all liquid is absorbed.
  • In the last 5 minutes, stir in optional peas or carrots if desired.
  • Fluff the rice with a fork, and serve warm.

Notes

For best results, use fresh vegetables and high-quality sausage. Adjust seasonings to taste.
