  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup milk
  • 1 large egg
  • Vegetable oil for frying For frying.
  • Powdered sugar for dusting For serving.

Preparation

  • In a mixing bowl, combine flour, sugar, baking powder, salt, and cinnamon.
  • In another bowl, whisk together the milk and egg.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Gently fold in the diced peaches.
  • Heat oil in a skillet over medium heat.

Cooking

  • Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides.
  • Remove and drain on paper towels.
  • Dust with powdered sugar before serving. Enjoy!

Notes

Serve with honey or maple syrup, whipped cream, or a scoop of vanilla ice cream. Store leftovers in an airtight container at room temperature for up to two days, or refrigerate for up to a week, reheating in a toaster oven or air fryer.
