  • 2 cans fire-roasted diced tomatoes (14 oz. each)
  • 4 oz. chopped green chiles
  • bunch cilantro, chopped
  • ½ white onion chopped
  • tsp garlic powder
  • 1 tsp ground cumin
  • ½ tsp salt
  • 2 tbsp apple cider vinegar
  • 3 fresh peaches peeled and chopped

Preparation

  • In a food processor or blender, add the fire-roasted tomatoes, green chiles, cilantro, onion, garlic powder, cumin, salt, and vinegar.
  • Pulse for 10–15 seconds until lightly combined but still slightly chunky.
  • Add the chopped fresh peaches and pulse again for 5–10 seconds to mix.
  • Taste and adjust seasoning if needed.
  • Serve immediately or refrigerate for at least 1 hour for deeper flavor.

Notes

Best enjoyed fresh within a few days. Store leftovers in an airtight container in the fridge for up to three days, or freeze for future use.
