Instructions
 

Preparation

  • In a bowl, whisk together the low-sodium soy sauce, honey, olive oil, minced garlic, fresh grated ginger, lime juice, kosher salt, and black pepper until well combined.
  • Place the chicken cubes in a large zip-top bag or bowl and pour the marinade over the chicken. Ensure all pieces are evenly coated. Seal the bag or cover the bowl and refrigerate for at least 30 minutes, ideally 1-2 hours.
  • If using wooden skewers, soak them in water for 30 minutes. If using metal skewers, prepare them directly.
  • Preheat your grill to medium-high heat.

Cooking

  • Thread the marinated chicken and pineapple chunks onto the skewers, alternating between the two.
  • Place the skewers on the grill, ensuring they are not crowded. Grill for about 10-12 minutes, turning occasionally until the chicken is cooked through and registers 165°F on a meat thermometer.
  • Remove the kabobs from the grill, and let them rest for a few minutes.
  • Garnish with sliced chives or green onion if desired, and serve with additional lime wedges.
