  • 1 loaf loaf of brioche or challah bread, cubed Opt for high-quality bread for better texture.
  • 2 cups fresh blueberries Frozen blueberries can be used without thawing.
  • 6 large eggs Ensure they are at room temperature for better mixing.
  • 2 cups milk Almond milk can be used as a substitute.
  • 1/2 cup maple syrup Adjust sweetness to taste.
  • 1 teaspoon vanilla extract For added flavor.
  • 1 teaspoon ground cinnamon Can add nutmeg for extra flavor.
  • 1 pinch salt To enhance flavor.
  • Powdered sugar for serving Optional for garnish.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a baking dish.
  • In a large bowl, whisk together the eggs, milk, maple syrup, vanilla, cinnamon, and salt until smooth and well mixed.
  • Layer the cubed bread evenly in the prepared baking dish.
  • Sprinkle the fresh blueberries over the top of the bread.
  • Pour the egg mixture evenly across the bread and blueberries, gently pressing down to ensure the bread is soaked.
  • Let the mixture sit for about 15 minutes.

Baking

  • Bake for 45-50 minutes, or until the casserole is golden brown and set in the center.
  • Allow it to cool slightly before serving.
  • Dust with powdered sugar if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days or frozen for two months. Can be made ahead of time and refrigerated before baking.
