  • 2.25 cups Sugar Use alternatives like agave or monk fruit sweeteners if desired.
  • 2 boxes Lime Jell-O (3 oz each) Can experiment with different Jell-O flavors.
  • 2 packs Unflavored Gelatin Essential for the gummy texture.
  • 1 count Shamrock Cookie Cutter Use for shaping gummies.

Preparation

  • Mix all of the ingredients in a saucepan over medium to high heat. Stir until it reaches a boil.
  • Boil for one minute.
  • Remove from heat and pour into a parchment-lined 13x9 baking dish.
  • Place the baking dish in the refrigerator to cool for 2 hours or until set.
  • Once set, remove from the pan and dust the tops with sugar.
  • Using your cookie cutter, cut out shamrock shapes. Dip the cookie cutter in sugar to prevent sticking.
  • Roll the gummy shamrocks in sugar to coat the bottom and sides. Set aside on a parchment-lined cookie sheet.

Notes

For the best results, let the mixture boil for a full minute and pre-coat your cookie cutter with sugar to ease cutting and add sweetness.
