  • 2 pounds boneless, skinless chicken thighs or breasts
  • 3 pieces carrots, diced
  • 3 pieces celery stalks, diced
  • 1 piece onion, diced
  • 4 medium potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 pieces bay leaves
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour (optional, for thickening) Substitute with cornstarch for gluten-free.
  • 1/4 cup fresh parsley, chopped (for garnish, optional)

Preparation

  • Start by searing the chicken in a hot skillet until golden brown, about 3-4 minutes per side to build flavor.
  • Place the seared chicken into your slow cooker along with the diced vegetables, cubed potatoes, minced garlic, and bay leaves.
  • Sprinkle thyme, salt, and pepper over the ingredients, stirring gently to distribute.
  • Pour in the chicken broth. If thickening the stew, whisk the flour with some broth before adding.
  • Cover and cook on low for 6–8 hours or on high for 3–4 hours until the chicken and vegetables are tender.
  • Remove the bay leaves, taste and adjust seasoning as needed, then serve with fresh parsley on top.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat gently, adding broth if needed.
