Wet Ingredients

  • 1 cup peaches (peeled/diced) Use ripe peaches for best flavor.
  • 0.5 cup vegetable oil
  • 0.5 cup sugar
  • 2 units eggs Should be at room temperature.
  • 0.5 cup sour cream Can substitute with Greek yogurt.
  • 1 tsp vanilla extract

Dry Ingredients

  • 1.5 cups flour All-purpose flour; for added fiber, use half whole wheat.
  • 1 tsp baking soda
  • 0.5 tsp salt

Preparation

  • Preheat the oven to 350°F (175°C) and spray 3 mini loaf pans or 1 large loaf pan.
  • In a medium bowl, combine the peaches, oil, sugar, eggs, sour cream, and vanilla extract.
  • Stir in the flour, baking soda, and salt until just combined. Be mindful not to overmix; a few lumps are perfectly fine.

Baking

  • Pour the batter evenly into the prepared pans, ensuring each loaf is filled to the same level.
  • Bake for 25-30 minutes for mini loaves or 50-55 minutes for a large loaf, until golden brown.
  • Remove from oven and allow to cool slightly before slicing and enjoying.

Notes

For optimal flavor, use fresh, ripe peaches. If using frozen peaches, thaw and drain before incorporating into the batter. Store any leftovers wrapped tightly to maintain freshness.
