  • 1 lb chicken breast, sliced Can be substituted with shrimp, tofu, or beef.
  • 2 cups broccoli florets Can be replaced with bell peppers or snap peas.
  • 8 oz noodles (your choice) Rice noodles, egg noodles, or whole wheat options work well.
  • 4 cloves garlic, minced Can be pre-minced for convenience.
  • 2 tbsp soy sauce
  • 1 tbsp chili paste Use less for a milder flavor or substitute with sriracha.
  • 2 tbsp olive oil
  • Salt and pepper to taste

Cooking Instructions

  • Cook noodles according to package directions. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat.
  • Add minced garlic and sauté until fragrant, about 30 seconds.
  • Add sliced chicken breast in a single layer and cook until browned and no longer pink, about 5–7 minutes, stirring occasionally.
  • Push chicken to the side and add broccoli florets. Stir-fry for 3–4 minutes until bright green and tender-crisp.
  • Stir chicken and broccoli together, then pour in soy sauce and chili paste. Mix to coat.
  • Add the cooked noodles to the skillet and toss everything until combined and heated through. If dry, add a splash of reserved noodle water.
  • Season with salt and pepper to taste and serve hot.

Notes

For best results, prep all ingredients ahead of time. Store leftovers in an airtight container; keep refrigerated for up to 3 days or freeze for up to 2 months.
