  • 1 cup split peas Rinse thoroughly before use.
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup cooked ham, shredded Can be omitted for a vegetarian version.
  • 1 teaspoon thyme
  • to taste Salt and pepper

Preparation

  • Rinse the split peas under cold water and set aside.
  • In a large pot, sauté onions, carrots, celery, and garlic in a little oil until softened.

Cooking

  • Add the split peas, broth, ham, thyme, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for about 1 hour, or until the peas are tender.
  • Use an immersion blender to puree the soup to a desired consistency if you prefer it creamy.
  • Serve hot and enjoy!

Notes

This recipe is flexible; consider adding other vegetables or spices to suit your taste. For vegetarian options, omit the ham and use vegetable broth. The soup can also be made in a slow cooker for convenience.
