Preparation

  • Begin by placing the pecans, medjool dates, vanilla extract, and salt into the bowl of a food processor.
  • Blend the mixture until it resembles crumbled dough that holds together when pinched.
  • If the mixture seems too dry, you can add up to 1 tablespoon of melted coconut oil or a splash of water. Blend again until it comes together smoothly.
  • Gently fold in the mini chocolate chips by pulsing the processor a few times.
  • Use a mini cookie scoop or a tablespoon to portion the mixture into 12-15 small rounds.
  • Roll each portion into a ball and enjoy your homemade Turtle Energy Balls!

Notes

Store any leftovers in an airtight container in the refrigerator for up to a week, or freeze for up to three months. For a sweeter snack, consider adding a splash of maple syrup or a pinch of cinnamon during blending.
